Antanas Vainius is an authentic and high quality whole food chef. He understands nourishment from the ground up. Which means he chooses his ingredients from local growers, ensures that production methods encourage and retain the highest nutrient quality, and then prepares the food in the style and manner that not only brings out the best possible flavor but makes sure that the food is digestible and assimilates smoothly.
Much of our modern disease is as a result of soil depletion and improperly prepared food. For example, it takes 26 apples today to nutritionally equal one apple grown in 1950. Unless of course we support growers who remineralize their soils, use cover crops, and recycle nutrients. We should pay more for these kinds of products grown by these kinds of farmers. They are sequestering carbon, improving our food, and strengthening our communities. We vote with our dollars. And I’ll speak for myself when I say that’s where I want my wealth to reside: healthy soils, healthy people, and strong communities.
Likewise when we eat poorly prepared food such as extruded, extracted, processed, pasteurized, and improperly prepared foods, we add to our toxic load and stress out our systems. For example all grains, beans, seeds, nuts, and legumes contain an anti-nutrient that is detrimental to the body and hard on the digestion. UNLESS it is soaked and rinsed and sprouted. Then it is like
heaven to the body.
When we encourage, support, and reward cooks who take the time, care, love, and knowledge to prepare our foods in this way and with fresh, careful ingredients, we are buying our own health as well as supporting the kind of world we want.
